"I'm so excited, and I just can't hide it… " remember the song from The Pointer Sisters?

That is exactly how I feel!

For several years I've been waiting to upgrade our old double-oven that came with the house. Lately, it was just not baking well. And I couldn't really use the "Broil" function since it didn't generate enough heat.

Finally, we have found the unit that we liked and would fit into our cabinet space.

I LOVE this new double-oven!!!

Especially the new features I didn't have before: Convection and Broil/Crisp functions. A Convection oven has a fan that a regular oven doesn't. The fan helps blow hot oven air over and around the food, then vent it back out. As a result, this hot air surrounds the food so that it cooks evenly and more quickly.

The Broil/Crisp is a wonderful Finish function that I have used to Crisp these baked Kotletki/Patties and I've used it for the Broiled Salmon that I've cooked a couple of days before.

Another thing that I absolutely Love is how Quiet this unit is. The old one, oh my, it would take a long time to heat up and made such a raucous and then cooling off process.

This is the old, black double-oven that I'm glad is no longer in my house! It was used and abused by previous owners and didn't match all the other stainless steel appliances that we've replaced over the years.

The Whole Package

I cook almost daily but don't have the time to upload all of our meals.

My cooking philosophy as you know by now: must be Q uick , Easy , Healthy (or somewhat healthy), obviously Delicious and must Look Good (not semi-digested looking as in the nursery homes). Sorry for the visuals.

We always have a fresh side salad with our dinner. And as much as we LOVE carbs (potatoes, rice and pasta), I try to limit those or serve small portions of it. Veggies are our staple!

Always have on hand Cabbage, Zucchini, Peppers, Mushrooms and lots of Tomatoes that I add to almost all of my dishes since I like the Mediterranean flavor.

For the Baked Chicken Patties , I've used my Kotletki recipe, but shaped into these cute patties!

How to make Baked Chicken Patties/Kotletki and Veggies

Baked Chicken Patties/Kotletki

In a large bowl, add ground chicken (or ground turkey), bread crumbs, Parmesan cheese, garlic and onion powder, eggs, sour cream, oil, salt, and pepper to taste. Mix well.

Shape into patties and dredge into Italian Style Bread Crumbs and Parmesan cheese mix. Spread 2 – 3 tablespoons of Olive onto a foil-lined cookie sheet and place your patties.

For the veggies/potatoes: slice and add salt, pepper, crushed garlic, Olive oil and Parmesan cheese on top.

Bake uncovered at 400F for 15 to 20 minutes on one side, remove, flip to another side.

Bake for another 5 – 7 minutes until nicely browned. I have used the new Broil/Crisp function for the last 2 minutes.

These make Perfect lunch for your kids to take to school or for you to work! You can eat them as is, with your favorite sauce, on top of the salad or in the bun as a chicken sandwich.

Ingredients

  • 2 pounds Ground Chicken or Ground Turkey
  • 2 large Eggs
  • 2 Tbsp Sour Cream
  • 1 Tbsp Olive Oil
  • 2 Tbsp Grated Parmesan Cheese
  • ¼ Cup Italian Style Bread Crumbs
  • 1 Tbsp Garlic Powder
  • 1 Tbsp Onion Powder
  • salt and pepper to taste
  • 1 Cup additional breadcrumbs and Parmesan cheese mix for dredging

Instructions

  1. In a large bowl, add: ground chicken (or ground turkey), bread crumbs, Parmesan cheese, garlic and onion powder, eggs, sour cream, oil, salt and pepper to taste. Mix well.
  2. Wet hands and shape into patties.
  3. Dredge into Italian Style Bread Crumbs and Parmesan cheese mix.
  4. Spread 2 – 3 tablespoons of Olive onto a foil lined cookie sheet and place your patties.
  5. Preheat oven to 400F.
  6. Bake uncovered at 400F for 15 to 20 minutes on one side, remove, flip to another side and bake for additional 5 – 7 minutes until nicely browned.
  7. I have used the new Broil/Crisp function for the last 2 minutes.
